Overview
Pistachio is a long-lived nut tree from the dry hills of western Asia, and it belongs to the same family as the cashew and the mango. It grows slowly into a broad, spreading tree, reaching 20 to 30 feet (6 to 9 m) in both height and width over many years. This is a tree you plant for the next decade, not the next season.
What sets pistachio apart is that male and female flowers grow on separate trees. A female tree carries the nuts, but it stays barren unless a male tree blooms nearby and the wind carries pollen across to it. Plan for both from the start, or you'll grow a handsome tree that never fruits.
It also has firm demands about climate. Pistachio wants hot, dry summers, real winter chill, and low humidity, the conditions of California's Central Valley and the Mediterranean. Push it into damp, mild air and you trade nuts for fungal blight.
Care
The short version: full sun, deep but infrequent water, and a dry canopy in alkaline, well-drained soil. Plant a male near your females, feed through the growing season, and give the tree the hot summers and winter chill it needs.
Light
Pistachio demands full sun and tolerates no shade at all. The tree needs every hour of light and the baking heat that comes with it to ripen a full crop, so give it the most open, sun-struck spot you have.
Water
Water deeply but rarely, soaking the root zone every 10 to 21 days and letting the top half of the soil dry out between drinks. The tree is drought-tolerant once established, and keeping the canopy dry while easing off near harvest holds blight at bay.
Soil
Plant in deep, well-drained sandy loam to loam, ideally on the alkaline side at a pH of 7.0 to 8.0. Pistachio shrugs off calcareous and moderately salty ground, but it cannot stand wet feet, so waterlogged soil will kill it.
Temperature
This tree handles a remarkable range, from about 14°F (-10°C) in winter to 109°F (43°C) in summer. It actually needs both extremes, the long winter chill to break dormancy and the fierce summer heat to fill the nuts.
Humidity
Pistachio belongs in dry air, around 20% to 50% humidity. Damp, muggy conditions are exactly what Alternaria and Botryosphaeria blights feed on, so good spacing and a dry canopy matter more than any other humidity step.
Feeding
Feed through spring and summer with nitrogen plus potassium, zinc, and boron, split across several applications rather than dumped at once. The micronutrients matter here, since zinc and boron shortfalls are common in the orchard.
Pruning
Prune in the dormant winter, training young trees to an open vase or modified central leader. Strip off any rootstock suckers and water sprouts below the graft union, then thin and head shoots to renew fruiting wood and even out the heavy-and-light alternate bearing.

Troubleshooting
Most pistachio trouble traces back to two things: a soil or canopy fungus, or a tree that never got pollinated. Catch the early signs on the wood, leaves, and shells and you can act before a season is lost. Match what you see below, then move on it.
Sudden wilting and dieback on one side of the tree
This is Verticillium wilt, a soil fungus that creeps into the roots and plugs the water-carrying tissue from the inside. Cut into an affected branch and you'll find brown streaking through the wood, usually with the damage concentrated on one side. There's no spray that cures it, so the real defense is planting on a resistant rootstock like UCB-1 and keeping young trees off ground that once grew cotton, tomato, or pepper.
Fix:

- Remove and destroy severely affected trees
- Avoid replanting into heavily infested soil
Black lesions on shoots with blighted nut clusters
This is Botryosphaeria blight, a fungus that rides in on rain and overhead water and shows up worst in wet years. Look for blighted shoots and shriveled nut panicles dotted with tiny black fruiting bodies. Prune out and burn the infected wood, drop your sprinkler heads to keep the canopy dry, and time a strobilurin fungicide to bloom and the rain that follows.

Angular black leaf spots and early leaf drop
This is Alternaria late blight, which takes hold when humidity, dew, or a wet canopy linger around the leaves. The spots are black and angular, the hull lesions often carry a reddish halo, and the tree sheds its leaves before it should. Open up the canopy for airflow, switch from overhead to drip irrigation, and rotate fungicides through late June into early July.

These blanks almost always come back to pollination. Pistachio carries male and female flowers on separate trees, so a female with no male blooming nearby never gets the wind-borne pollen it needs. Plant one male within about 20 m of your females with bloom that overlaps, keep the trees fed and watered through nut fill, and manage the crop load so alternate bearing doesn't starve the developing nuts.

The kernel isn't a true poison, but the fat can leave a cat drooling, off its food, and dealing with vomiting or loose stools. A swallowed shell is the bigger worry, since it can choke or lodge in the gut, and a moldy nut adds the risk of tremors or liver trouble.
Dogs Mild
Dogs are the ones most likely to raid a bowl, and a fatty load can bring on vomiting, diarrhea, and even pancreatitis. The hard shells choke or block the intestines, and any nut gone moldy can push a dog into tremors or seizures.
Horses Caution
Pistachios aren't horse feed, and there's no reason to offer them. A horse that gets into the rich, fatty nuts could end up with colic or a sour stomach, and moldy ones are riskier still.
Rabbits Caution
A rabbit's gut runs on hay and greens, not on oily nuts. Even a small pistachio is far too fatty and can upset digestion, so keep them away from the kernels and shells alike.
Livestock Caution
Cattle, goats, and sheep have no business eating pistachios, and a pile of fallen nuts is best cleared. The fat sits poorly with a grazing animal, and moldy nuts carrying aflatoxin are the real hazard to watch.

Varieties
Pistachio cultivars come in two camps, the females that bear the nuts and the males that pollinate them. A working orchard needs both, so the names below are worth knowing as pairs.
Kerman
The long-standing standard female cultivar in California, a late bloomer that bears its nuts in heavy and light years in a strong alternate pattern.
Peters
The main male pollenizer, valued because its bloom is timed to overlap with Kerman and feed it pollen on the wind.
Golden Hills
A University of California release that blooms and ripens earlier than Kerman, stretching the harvest window.
Lost Hills
Another UC female cultivar prized for its large nuts, usually paired with the Randy male as its pollenizer.
Companions
Pistachio's one essential companion is a male tree of its own kind. Without a bloom-matched male within range, the wind has no pollen to carry and the females set nothing.
