Kale must be harvested at the proper frequency to ensure steady production and flavor. The cut-and-come-again practice can be performed on a weekly cycle. I harvest every Wednesday morning in my garden so that it regrows consistently. Successful timing will significantly extend your kale harvesting season.

Baby Leaf Harvesting

  • Timing: 25-30 days after sowing
  • Method: Cut entire rosette 1 inch above soil
  • Regrowth: New leaves in 10-14 days
  • Yield: 3-4 harvests per plant

Mature Leaf Harvesting

  • Timing: 55-75 days after sowing
  • Cut Position: ¼ inch above leaf base
  • Frequency: Weekly during peak season
  • Tip: Harvest in morning for crispness

Adjust frequency based on plant vigor and weather conditions

Use the cut and come again method! For: Cut outer leaves first ¼ inch above the basic stem. Leave the central bud for regeneration. I cut 2-3 leaves a plant every week which constantly stimulates fresh new leaves for over six months.

Do not Harvest Under Frost Conditions! Frozen Leaves Have a Greater Chance of Damage You'll Notice. I am not Interested in Harvesting Your Product Until You Experience the Temperature Difference of Being Above Freezing. Once They Experience Frost, Their Textures Develop a sugary taste due to the Process of Natural Sugar Conversion, Which Affects Their Overall Quality.

Tool Selection

  • Sharp Scissors: Clean cuts prevent disease
  • Harvesting Knife: For thick stems
  • Sanitizer: Wipe blades between plants
  • Basket: Breathable for field transport

Post-Harvest Handling

  • Cooling: Within 30 minutes of picking
  • Storage: 32-36°F (0-2°C) with high humidity
  • Washing: Only before use
  • Quality Check: Discard yellowed leaves

Keep an eye on your plant and harvest accordingly. When the flowers start to bud, stop unless you like a bitter leaf! I fertilize every month during harvest. Rotating your areas each time you harvest helps prevent the plant from becoming stressed. Your kale will reward you in abundance if you continue to pick it!
