How do I know when raspberries are ripe?

Raspberries are at their best in flavour and sweetness when fully ripe. Ripe berries should readily release themselves when pulled gently, leaving the core on the plant. They should be of a uniform deep colour and show no trace of paleness. They should feel firm and plump, and be shunned when hard or wizened.

Color development.In red berries, this indicates that the fruit is deep ruby all over; the golden types are deep yellow, without a trace of green remaining. Black raspberries display a fine, almost black lustre. Inspect every day throughout the ripening period, for the fruit soon ripens or becomes overripe; depend upon colour only when touching it first confirms what the eyes see.

Harvest Timing. When you harvest affects flavor and shelf life. Pick early in the morning, before 10 AM. The berries will be firmer that way and will keep longer. Don't ever pick after a rain or watering. They will spoil you. Daily, if you can, and at least every other day in the height of the season.

Reputable spurious impersonation is poisonous, and its berries are easily bruised. Pick the berries gently and drop them straight into shallow containers. Never pile them up more than 3 berries deep. All berries should be kept UNWASHED until ready to use. Refrigerate as soon as you receive them at 32-34°F (0-1 °C). Proper handling will keep the berries fresh for 5 days.

Avoid harvesting mistakes. Don't jerk at the berries and break apart the bush in pulling them. Don't wait until they turn dark red in the hope that they will sweeten more, for in such a case, they will soon be too ripe for flies and rootworms to eat their fill. Whenever in doubt, taste a few of the berries before harvesting a whole patch.

Learn how the weather affects ripeness. Hot spells hasten the ripening and require daily attention; if the weather is cool, the harvest may be prolonged. Rains also cause the berries to absorb water, and thus become comparatively tasteless.
