What happens if I harvest beets too early?

The roots remain as small as a golf ball, maturing with no "funny" sweetness, no protective layers of skin, maturing in storage for no longer than five days; even so, you may enjoy its delicate flavour if you obey the rules.

If you are unsure, harvest only half of the row. The beets that were not harvested will continue to grow if left alone. Use stakes to mark the harvested plants and return in two weeks to check their progress. By using this staggered approach, you can prevent yourself from losing the entire crop.
Immediately roast whole baby beets after harvesting to enhance the flavor. Add olive oil and thyme. For quick sautéing, the greens pair well with garlic and lemon in vibrant salad recipes.
Store early-harvested roots differently from fully developed roots. Place early-harvested roots in damp paper towels in sealed containers and store them in the refrigerator at 38-40°F (3-4°C). Do not wash the roots before storing. Moisture causes early-decaying, thin-skinned roots to break down faster.
Review past early harvests to determine what went wrong for harvesters. Check for shoulder visibility before pulling beets; allow this to develop enough to ensure a crown 1-3 inches above soil level. The longer you can have patience (and thus enable these beets to grow) before pulling, the better tasting and keeping quality (nutritional value) you'll achieve.
