Rapid varieties, such as 'Tokyo Cross', will produce roots in 35 days. Soil temperatures above 45°F (7°C) will develop faster germination and growth.
Leaf Development
- First 30 days: Greens reach 6-8 inches for harvest
- Soil temp: 60-65°F (16-18°C) accelerates leaf growth
- Tip: Clip outer leaves to keep plants productive
Root Bulking
- Days 30-60: Roots expand to 2-3 inches diameter
- Ideal temp: 55-75°F (13-24°C) prevents woodiness
- Avoid: Overcrowding by thinning seedlings early
Soil quality and spacing will affect growth rates. I like to use loamy soil with compost for drainage. Thin seedlings to 4 to 6 inches apart because too much density will hinder root growth. For fall crops, plant 8 to 10 weeks before the frost, letting them take advantage of the cool weather, which sweetens most crops.
Young harvest greens for salads, or wait for larger leaves. If roots are left too long in the ground, they will want to get woody. Store unwashed roots in perforated bags in the fridge. For winter, layer the roots in a cool basement in damp sand, and they will last for months.
