How do you know when carrots are ready to harvest?

Shoulder Diameter
- Measure the crown width at soil level
- ¾-1 inch (1.9-2.5 cm) indicates maturity
- Use calipers or compare to coin sizes
Top Height
- Check stem length from soil to tallest leaf
- 10-12 inches (25-30 cm) signals readiness
- Look for 8+ sturdy dark green stems
Days Since Sowing
- Most varieties need 60-80 days
- Early types finish in 50 days
- Adjust for cold weather delays
Vibrant Color
- Expose top ½ inch of root
- Orange varieties show deep uniform pigment
- Purple carrots develop richest hues
Finger-Width Test
- Match shoulder to index finger
- Adjust for mini or large varieties
- Combine with days tracking
Soil moisture affects the timing of your harvest. Water the well 24 hours before you are to pull from the ground. Too dry, they may break; too wet, they compact. Grab a handful and squeeze it. It should hold and then drop. If I want my crops to be tasty, I pull them in the early morning when the weather is not hot.
Carrot growth is affected by changes in temperature. When temperatures exceed 85°F (29°C), carrots develop woody centers. As carrots receive light frost, below 40°F (4°C), their sugar content increases. Be sure to monitor weather forecasts and cover carrots as needed to protect them from damage caused by extreme weather conditions. Proper timing is crucial for maintaining the quality of your harvested carrots.
Different kinds require different treatments. The baby, or little, carrot is ready sooner than the thick storage type. Read your seed packets for the exact information. The climate in which you live will govern the rate of growth. Keep careful records in your garden notebook, dated by season; your own experience will be the best teacher.
