Prof. Samuel Fitzgerald, Ph.D.A wide variety of lettuce will give you multiple harvests if harvested properly. Leaf types and butterheads regrow after cutting if you leave a stem of approximately 5 cm (2 inches) intact. Crisphead types like iceberg are once-over plants. I've been harvesting leaf lettuce from the same plants for months by cutting them correctly.
Leaf Varieties
- Harvests Possible: 3-4 times per plant
- Cutting Technique: Remove outer leaves only
- Recovery Time: 7-10 days between harvests
Head Varieties
- Butterhead/Romaine: 2-3 partial harvests
- Cutting Method: Take outer leaves first
- Critical Rule: Never cut central growing point
Maximize your regrowth with proper aftercare. Water deeply within 2 hours after cutting your crops. Use a balanced fertilizer such as a 5-5-5 NPK solution. Keep the daytime high below 75°F (24 °C). These steps encourage fresh regrowth. I fertilize my lettuce every week during the harvest season.
Avoid the common errors that can kill a plant's ability to regrow. Do not remove more than a third of the leaves at once. Do not harvest with dull or dirty tools. Avoid disturbing the roots when cutting or picking. Never let your plants cook in extreme heat. Make too many of these mistakes, and you'll kill the plant's ability to regrow from harvest.
Prolong your harvest season with succession planting. Sow more seeds every 14 days to supplement your harvest. Combine with regrowth for ongoing production. In my garden, this means harvest salad throughout the spring and into the fall! Start with the summer sowing of heat-resistant seeds.
Know when your plants stop producing. A second or third harvest, and your plant is considerably smaller, with less flavorful leaves (and the leaves are smaller too), time to twist-tie it and compost it. Make sure to rotate your planting spots as well.
