What are essential preservation methods for artichokes?

Some methods are suitable for culinary use, while others extend the time they will keep for the table. Their exquisite flavor can be saved only by prompt curing, as the buds quickly lose their flavor. With careful attention, it is likely that you can keep your home-grown artichokes for use throughout the year.
Refrigeration Method
- Store unwashed buds in perforated plastic bags
- Maintain 32-34°F (0-1°C) with 95% humidity
- Place paper towels to absorb excess moisture
- Check daily for browning or soft spots
Freezing Process
- Blanch halves in lemon-water for 7 minutes
- Shock in ice water to halt cooking
- Dry thoroughly before vacuum sealing
- Use within 8 months for best quality
Pickling Procedures
- Sterilize jars and lids before packing
- Use vinegar brine with 3% acidity minimum
- Add garlic, dill, and peppercorns for flavor
- Process in water bath for 15 minutes
Use acidification methods to inhibit enzymatic browning during processing. Immediately after cutting or slicing artichokes, soak them in a solution of ascorbic acid (commonly known as vitamin C). Use 1 teaspoon per quart of water for maximum efficiency in preventing oxidation. Lemon juice has similar effects but may be somewhat responsible for changes in flavor.
Baby artichokes: Treat these small buds differently when preserving them. For these little buds, just 4 or 5 minutes of blanching; great for pickling because of their tender little bracts. I pack them whole in jars with some rosemary, chili flakes, etc., and cover with the warm vinegar syrup. The quick move in the brine is a plus of their small size.
Avoid common preservation errors such as not following through with proper blanching or sealing. Insufficient blanching leads to discoloration; too much causes mushiness. Always remove air from freezer bags to avoid freezer burn. To check for a seal after processing, press the center of each lid. Refrigerate if the seal has failed.
