The first step in the process is germination, which occurs in 5-10 days indoors. For optimal results, maintain your soil temperature at 65-75°F. Seedlings will need 4-6 weeks of growth before being transplanted outside. Be mindful of shock from outdoor conditions and harden off seedlings gradually.

Environmental influences have a significant impact on the speed of maturity. Lower temperatures of 45-75 degrees F help growth. Frost makes the plants taste great, but it doesn't speed up maturity. If it gets hot, a regular watering cycle will ensure plants do not wilt.
The time to harvest will depend on the size of the sprout that you want to eat. Pick when the sprouts are 1-1.5 inches in diameter, starting at the bottom of the stalk and moving upward. Although exposure to light frost will sweeten the sprouts, it delays their readiness by several days.
Plant at intervals every two weeks to harvest continuously. Mix early and late varieties. It will provide you with a fresh sprout harvest over a longer period. Keep in mind that for optimal flavor development, your sprouts will need some frost exposure.
