These plants can be grown to full size in pots of at least 15+ gallons, as long as you provide the proper care. Growing in containers means greater flexibility, and a better chance of avoiding frost if you need to take your plants indoors in cold climates.

Specialized watering: Pot artichokes need watering every day during summer heat, as against a good soak once a week in the ground. Buds are aborted for want of water, and husky rot follows at the roots from too much.
Apply a specific fertilizer for containers every three weeks. I use a balanced 10-10-10 NPK liquid fertilizer, diluted to half-strength, and supplement that with kelp emulsion for trace minerals. I blend slow-release granules into the soil when I plant to provide a steady supply of nutrients. If you see yellowing on lower leaves, feed your plant immediately.
Vernalization involves moving pots to a location with temperatures of 45 to 50°F (7 to 10°C) for 10 to 14 days. An unheated garage is a useful housing for this chilling treatment. The plants should be protected from any sudden drop in temperature below 35 degrees F. (2 degrees C.). This cold period will produce reliable flowering in container-grown artichokes.
