What indicates kiwi fruits are ripe?

Prof. Charles Hartman, Ph.D.To determine kiwi ripeness, several signs/checks are necessary. For hardy types, such as Arctic Beauty, a reddish-purple blush on 30% of the surface of the fruit is ideal. Fuzzy ripeness is typically indicated by the black seeds seen through the translucent flesh. I check one fruit in each cluster for ripeness before harvesting.
Visual Signs
- Hardy kiwis: Red/purple skin blush
- Fuzzy kiwis: Brown fuzz dulls to matte finish
- Arctic kiwis: Translucent green flesh
Measurement Tools
- Brix refractometer readings of 14-18%
- Firmness test: 2-4 lbs pressure ideal
- Stem detachment with gentle twist
Please take care to: Not harvest too soon. My 2022 crop lost approximately 40% in sweetness because we harvested our crop too early. Brix readings can be taken every week with a $25 refractometer. Make sure you calibrate using distilled water each time. Store immature kiwi at 32°F (0°C) for 3-6 months and they will ripen slowly.
Storage Solutions
- Unripe: Ventilated crates at 32°F (0°C)
- Ripe: Perforated bags at 34-35°F (1°C)
- Frozen: Peeled slices on parchment paper
Ethylene management speeds up the ripening process. To induce ripening, place firm kiwis in a paper bag with apples, as apples give off ethylene gas. Within 3 to 5 days, the fruit will soften. I get 16% Brix levels with this combination, with only 12% Brix in room air. Do not use this method with leafy greens, they will yellow very quickly!
